Lemon Lover's French Bean Dip

Don't go too heavily on the garlic or it will end up tasting too much like hummus. If you happen to have preserved lemons on hand, try them in this dip.

Ingredients
1 can white kidney beans (cannellini beans or other white bean), drained
dash of granulated garlic (optional)
2 Tbls. olive oil
zest from two lemons
juice of one lemon
1 teas. salt
fresh minced herbs - thyme, rosemary, or parsley
Preparation
Put all ingredients into blender or food processor and blend until smooth.
Herbs can be added before or after blending.
Taste and adjust salt.
