Easy Berry Vinegar

Notes: Expensive wine vinegar works very nicely and sushi vinegar is convenient because it already has the sugar and salt added. But you can get very nice results with inexpensive cider vinegar.

Ingredients
1 to 2 cups fresh or frozen berries
1 quart vinegar
2 Tbls. (or more) sugar
1 teas. Kosher salt
fresh sprig of thyme (optional)
Preparation
Bring all ingredients to a boil
Set aside to cool
Strain out berries and herb
Pour into bottles
Refrigerate
