Baking yeasted breads without recipes is creative and fun. Yeasted bread dough is actually simple to make and forgiving of mistakes; it is also adaptable to endless variations.
This class will teach you the simple principals of bread making, as well as the ratio of the basic ingredients, and a few rules of flavoring and substitution. The instructor will provide an assortment of ingredients and some suggestions about different breads to bake. Students will work in pairs and create their own variations of the basic recipe provided.
Some possible breads will be: Harvest Wheat Bread, Lemon Scented Rye, Yeasted Cornmeal, and Foccacia.
You'll create your own bread using an assortment of available flours, oils, and flavorings. Some of the possibilities will be: Yeast Corn Bread, Rosemary Olive Bread, Oatmeal-Raisin Bread, and Pesto Swirl Bread.
We'll also make a wonderful Vegetable Soup to accompany our freshly baked breads.
